Ok, just to inform anyone with the same issue. 
If you see a big latency when you're typing or even that the keyboard doesn't write at all (and your batteries are up or good)... get any device between the wireless keybaord and the receptor away (for me, as strange that it may sound it was my mobile that was causing the issue).
Everything was in order again after that. 
I don't really know why the the problem occur as it is supposed to be on different frenquencies and encoding but it surely has to do with the antenna of my mobile to mess up with my wireless receiver (or transmitter, don't know).
