Hello,
I have a EVGA GTX 260 and recently came into a 8800 GTX. I'm thinking of buying a BIOSTAR A870U3 mobo. If I do, would I be able to run the 8800 as a dedicated PhysX card?

You should be able to no problem. The good part about the whole thing is you already have the video cards:
