The problem is i have an Intel i5 2400 CPU, and an Asus p8h61m le mobo. The mobo is a lower end model, it has only 1 pci e x16 slot. I want to upgrade my rig with an SLI configuration, I'm thinking of using two gtx550 ti's. I went to the local shop here and i saw an Asrock extreme3 gen3 motherboard, it was the only motherboard they had with dual pci e x16 slots. I was just wondering if it will be okay to use my current CPU with that motherboard. I'm not planning to overclock my cpu or anything because i know that it is locked, I just want to use the 2 pci e x16 slots for SLI. I hope you guys can answer my question.. Thanks!

z68 boards work fine with your processor and any socket 1155 processor.

Yes. The K designation means only that that chip is unlocked for overclock. You can use any of the socket 155 chips on z68. I have a core i3-2100 myself.

Also note, at stock speed, the i5-2400 is only 10% slower than the i5-2500k.

As far as I remember all non "K" i5s can be used at z68 or p67 and they can also overclock a bit. They can be overclocked 400Mhz more than their turbo boost. The i5 2400 has a max turbo of 3,4 Ghz so you can achieve speeds of 3,8 Ghz with i5 2400 and a z68/p67 mobo.
