I have this HDD at the moment:
Seagate Baraccuda 3.5'' 320GB SATA2 7200rpm 16mb cache

I want to buy this 2nd HDD:
Samsung 3.5" 500GB SATA2 7200rpm 16MB Cache

The writing/reading speeds are different (75mb/s and 110-120mb/s)

Will I be able to form Raid 0 betwen them?

Yep, RAID 0 should be possible. Although it'll limit the faster drive.

How much would you say the average speed after RAID 0 will be?

Theoretically, twice the slower drive's speed. So, 75 x 2 = 150mb/s (if 75mb/s is the slower drives read/write speed) But those are only sequential speeds. Random read/writes are unaffected by RAID0. So only a performance increase in certain areas.
