Hello,
i want to go from on 5400 spin 2t hdd to a SSD128, 1 2t WD7200 64 FAEX bl caviar, and the old 5400 2t , I think Seagate. Should i set operating mode ACHI or RAID?

It doesn't matter. Set it to AHCI mode.

If you set it to RAID mode and you don't create an actual RAID array then all drives will automatically default to AHCI mode.
So you will be ok either way.

Meaning if i set Raid, I can set an array leter but can't if I set ACHI now.???? Seems like I should set it Riad if I want to change the array laterz????

I forgot to say thank you. If I decide to set an array, I guess I also have to buy a separate controller card and install that as well? I do not imagine ZTsystems installed a Board that also has a Raid COntroller card. THANKS FOR HELPING a not so knowlegible computer guy learn.

If you set AHCI now you can always change it to RAID later without any problems.
If you're going to create a RAID array in the near future then yes, set it to RAID now.

but whenever I want to set the array, I will need to add a separate controller card, correct?

No, you don't need to buy a separate controller card.
Your motherboard manual will have instructions on how to set up a RAID array when you're ready.
