First I would like to know if it's possible to overclock this particular factory oc gpu...and secondly im planning on getting another for sli. Is my power supply sufficient or do I upgrade my psu. And of course if I should skip out on the sli and wait for the new gpu next year and sli them... My new build working great btw.

I7 2600k oc to 4.5.
GA p67a-ud7 b3.
Evga gtx 580 superclocked
Corsair h60 hyrdo cooler
Pc power and cooling 750 w psu.....
8gb(2x4) corsair vengeance ddr3 pc1866
Logitech Z5500 surround sound
Logitech g19 keyboard
Logitech m500 mouse
Old ass gel booby mouse pad...

You can pretty much OC any video card (OC'd or not). Get a windows-based tool such as after burner:

Your power supply is insufficient for two 580s in SLI (especially OC'd 580s). Using an appliance load tester, I regularly hit over 750W total load with 2 580s at reference speeds and the configuration in my signature while gaming. Your processor only requires about 35W less than mine, but your OC, most likely brings the power requirement beyond mine. You would be maxing out the PSU for sure.
