I just finished the article on x58 boards, and got curious when I read that the BI-600 supports 4x 8 pcie 2.0 slots. When I look at pics of the board, the middle two slots look so close together. Is it really able to hold "real" single slot cards? Like a 4850 as an example. Anyone done this? How's the heat? Is it stable otherwise?

Well, based on what you've described, only low-profile cards are probably the only ones that can fit side-by-side. In any case, if you're planning to populate this mobo with expansion cards, perhaps you can make use of slot ribbons?
