Can I convert 2 drives set up in a Raid 0 back to 2 seperate drives with the data split between them?

Unless the RAID card has a utility to do this, no. You'll have to copy the data off the RAID onto another drive, break the RAID and reload / reformat as necessary, then copy the data back the way you want it.
