i7 7700K Stock vs i7 7700K 5GHz

What performance difference will I see if I overclock an i7 7700K to 5GHz vs stock performance? Is it worth to spend money on a water cooler to achieve the 5GHz oc without a thermal issue?

It depends on the task and type of games. Some games are CPU intensive and will benefit from higher frequency. It also depends on GPU, there is no point of having high overclock if your GPU is only GTX 960.
Based on reviews and benchmarks average gain from 5GHZ is around 3-4% (some games will have 0% benefit other 10%)
Even cheap evo 212 for 25$ will let you overclock your 7700k to 4.8GHZ, for 5GHZ or higher you will have to rise voltage a lot more which will generate heat and then you will have to buy more expensive cooler.

Unless you buy a pre-tested 7700K that is guaranteed to reach 5ghz there are no guarantees you can even get to 5ghz.

Even pretested you have to be willing to at least use the equal CPU cooling solution the tests were conducted with and also the voltages and BIOS suggestions they used as well. (Some just don't want to do that.)
