Your RAM is supposed to show 1600 in CPUZ, DDR stand for double data rate so you just multiply with 2, so 3200mhz.
About CPU clock, you should stick with classic method of overclocking, premade overclocking profile is so inaccurate and sometimes dangerous due to high voltage. Going manually you can decrease temperature and overclock even higher, keeping your system cool and quiet, up to you.
I've looked at some guides and youtube videos, but it still seems pretty complicated to me. I downloaded GIGABYTE EasyTune, which has this "advanced CPU" section:http://imgur.com/a/4xLAN
Which options should be changed in this? Also, is there another overclocking software that's better than EasyTune because it seems pretty jankedy sometimes. It seems that the options shown in that picture also differ a little from what I see in the BIOS.
