  1. Whats the problem?
  2. you sholuld stay well above 60 fps! i would say you will keep 80's even more and drop down to 70 when the situation becomes very messy. btw with rx series i recommend to activate DX12, you will see a huge performance boost compared to DX11 (and better performing than nvidia gtx 1060 :) )!
  3. You will get over over 60fps with that setup, most benchmarks seem to have a more powerful CPU in (at least an i7) and the RX480 GPU produces ~80fps. If you're not getting over 60 average then there is something going wrong.

You can adjust graphics settings to lighten the gpu load and increase fps but at a point the limiting factor becomes your cpu. I'd expect your 7500 to perform just under the 6600k (@stock) in this review http://www.gamersnexus.net/game-bench/2673-battlefield-1-cpu-benchmark-dx11-vs-dx12-i5-i7-fx/page-2

Would you recommend me to switch to a overclockable processor to go with with the overclocked graphics card?

No, you cant overclock on a H270 motherboard. Nor would it be remotely worth the money to buy another 250 dollar cpu just to overclock.
  7. The 7500 looks like a good choice, based on that review it should perform very well and capable of holding a minimum of 60fps.
